Not much for Pie? Rhubarb muffins rock!

growing rhubarb in NJ gardenMy three year old outrageously beautiful rhubarb plant is growing in my front yard. Last year I tried adding some to one of my fresh fruit/vegetable juices and I was totally turned off. I’ve never tasted rhubarb before and it was way too overpowering in the juice. I never bothered to add it to anything else and have never cooked with it before, until now.

I’m not much of a pie person, but my aunt, who knew I was trying to push rhubarb on every person who visited my house, sent me a recipe for rhubarb muffins. Light bulb! I did a search and found this well reviewed recipe and decided that if I had any chance of enjoying rhubarb, this would be a good bet. Aunt Norma’s Rhubarb Muffins. I’m sold. These are really good and I’ll probably branch out and try making other things with rhubarb very soon. The recipe says it will make 24 muffins, but I got 17 out of this. Very tasty! 2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups brown sugar
1/2 cup vegetable oil
1 egg
1 teaspoon vanilla extract
1 cup buttermilk
1 1/2 cups diced rhubarb
1/2 cup chopped walnuts
1 tablespoon melted butter
1/3 cup white sugar
1 teaspoon ground cinnamon
